Ingredients
- 3 large eggs
- 175 g caster sugar

Method

Separate the egg whites in to a clean, grease-free mixing bowl
- 2)
Using an electric whisk, whisk the egg whites in to soft peaks. Depending on your mixer this can take some time, as a guide about 7-10 mins. Soft peaks are when you lift the whisk up out of the mixture it leaves a cone of egg white which flops over at the top and goes back in to the mixture after a few seconds

Preheat your oven to 120 degrees celsius (fan) and line a baking tray with greaseproof paper

Return to the egg whites and continue whisking slowly adding the caster sugar 1 tbsp at a time until the sugar is combined and you have a stiff, glossy meringue mixture

Using a metal spoon place 6 roughly, equally sized blobs on the baking paper. Ensure they are well spaced
- 6)
Place in the oven for 1 hour 15 mins to give you a softer, mallowy centre. For a crisper meringue bake for an additional 15 minutes

Once baked, transfer to a wire rack to cool
