Roasted Lemon Chicken
Ok, I’ve got to be upfront, this one isn’t a looker but the flavours are insane, so you’ll have to trust me. It’s also incredibly easy to prepare, so you can have this as an alternative to your Sunday roast or whip up a tray full of the Roasted Lemon Chicken when you have friends round.
This chicken is marinated in aromatic spices that are easy to pick up, or you’re really likely to have them already and for just 10 minutes, with the skin on. Even this short amount of time the flavours really embed themselves within the chicken. You can marinate for longer, but if you don’t have time, honestly just 10 minutes will make all the difference.
To serve depends on the season, in summer pair with flatbreads and a delicious fresh salad – just like my super fresh and easy Sweet Potato, Pomegranate and Feta one. Or if you’re in or entering those colder winter months, make this your new Sunday night meal with piles of roast potatoes and green veg.

Ingredients
Marinade
- 2 tsp dried oregano
- 1 & 1/2 tsp ground coriander
- 1 & 1/2 tsp ground cumin
- 1 & 1/2 lemons, juiced
- 4 tbsp oil
- 2 tsp garlic, chopped finely
- 1.4 tsp salt
Chicken
- 1 kg chicken thighs and drumsticks, skin on
Method
Marinating the chicken
- 1)
In a large bowl mix the oregano, coriander, cumin, salt and garlic with the lemon juice and oil

Add the chicken to the marinade and mix well making sure that all sides are coated
- 3)
Put to one side for 10 minutes. This step will make sure that the chicken soaks up all the flavours
Cooking
- 1)
Whilst the chicken is marinating, pre heat the oven to 200 degrees celsius (fan)

Once the chicken has had a full 10 minutes marinating, place each piece of chicken in a single layer on a baking tray

Place in the oven for 50 minutes in total, baste the chicken after 30 minutes cooking time. Ensure the cooking juices run clear after the total cooking time

This is a great meal with delicious, fluffy roast potatoes. If you’re making the roasties fresh, place white potatoes diced in to 8ths on a separate baking tray with a drizzle of oil and salt and place in the oven at the same time as chicken
