Sweet potato, feta and pomegranate salad

Ingredients

  • 1 large sweet potato
  • 100 g spinach leaves, washed and chopped
  • 80 g pomegranate seeds
  • 100 g feta, cubed or crumbled
  • 1/2 lemon, juiced

Method

  • 1)

    Preheat the oven to 22O degrees celsius

  • 2)

    Cut the sweet potato in to small 1cm cubes

  • 3)

    Place on a baking tray with a sprinkle of oil and salt, and cook for 35-40 mins until crispy but not burnt. Check on the sweet potatoes regularly after 30 mins to make sure they don’t burn

  • 4)

    Once the sweet potato is cooked, place to one side to allow to cool completely

  • 5)

    In a large bowl place the fresh spinach, feta, pomegranate seeds and lemon juice and mix well

  • 6)

    Add the sweet potato and season to your tastes. And you’re done!
